Why not hire Mark to cater for you?

Mark grew up in the hospitality industry, becoming a chef was the only career path he ever considered. Food has always been his huge passion and one that he has been able to turn into his career.

He started his culinary training at catering college in Glasgow, where he also worked in one of the city’s most prestigious hotels, One Devonshire Gardens, like many young chefs he aspired to work at the highest level and that meant a Michelin starred kitchen so he moved to London to work in the 3 Michelin star Fat Duck, at that time voted the number one restaurant in the world. Since then he’s gone on to be a quarter-finalist on the first series of BBC’s Masterchef The Professionals in 2008,  held several head chef positions of his own and even spent time teaching in a well-known cookery school. Mark has now ventured away from restaurant kitchens and spends his time as a private chef and consultant.

He’s a regular chef on STV’s live topical weekday program Live at Five, and can be found demonstrating at many food festivals across the UK.

He’s also a member of the craft guild of chefs and an ambassador for Springboard UK (the hospitality and tourism charity)

Mark offers Three main styles of menus for private dining

Simple Suppers are the most informal menus, they are made up from some of his favourite recipes to cook at home and have been tried and tested many times, the dishes are homely and comforting and are served family-style. Like all of the menus, the dishes on the simple suppers will change seasonally. Simple Suppers are ideal for dinners with a large number of guests or for family celebrations with lots of different age groups. We would also highly recommend the simple supper menus to clients making use of Marks’ services over several consecutive days.

Elegant Evening Menus are more formal and are ideal for special occasions or dinner parties to impress friends or clients. Elegant Evening Menus suit both small and large groups. The dishes on the Elegant Evening Menus make use of the stunning natural larder we have in Scotland, dishes will centre on the quality of the ingredients and not on “cheffy” cookery techniques. Although only 3 courses Mark can add canapes and cheese boards to make a little bit more of an occasion of Elegant Evening Menus.

Signature Tasting Menus, as the name suggests Marks’ Signature Tasting Menus are made up of the dishes he has built his professional career on. The Signature Tasting Menus are either 6 or 8 courses and are ideal for special celebrations or for the ultimate foodie experience at home. Each dish has been carefully developed and tested and no dish makes it onto the Signature Tasting Menu until it’s the very best it can be, the dishes revolve around Marks’ food philosophy of only 3 ingredients per plate and make use of the techniques he learned in his career in Michelin starred kitchens.
